  • ½ cup white grape juice + ½ cup water or 1 cup chicken broth
  • 4 tbsp diced sun-dried tomatoes (drained)
  • 1 tsp sweet paprika
  • 1 tsp garlic granules
  • 1 cup sour cream or heavy cream
  • 1 tbsp cornstarch diluted in 2 tbsp cold water (optional)
  • 23 tbsp grated Parmesan cheese
  • 2 tbsp flat leaf parsley (or fresh basil, chopped)

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. In a skillet, heat butter and olive oil; brown chicken on both sides.
  3. Transfer chicken to the slow cooker; add grape juice mixture, paprika, garlic granules, and sun-dried tomatoes.
  4. Cook on LOW for 90 minutes to 2 hours until the internal temperature reaches 165°F (75°C).
  5. If desired, mix cornstarch with cold water to thicken the sauce near the end of cooking.
  6. Stir in sour cream and Parmesan cheese before serving.
