  • 2 tablespoons olive oil
  • to 3 pounds beef chuck roast
  • Kosher salt
  • Freshly ground black pepper
  • 2 packets dry onion soup mix
  • 2 cups water
  • 2 cans beef broth (or Better-than-Bouillon)
  • 68 slices Swiss or provolone cheese
  • 68 crusty rolls (ciabatta or hoagie)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the beef chuck roast with salt and pepper.
  2. Sear the beef on all sides until browned, about 1–2 minutes per side.
  3. Transfer the seared beef to your slow cooker. Sprinkle onion soup mix over the meat and add water and beef broth.
  4. Cover and cook on HIGH for 4–6 hours or LOW for 8–10 hours until the beef is tender.
  5. Remove the beef from the cooker and shred it using forks. Serve on sliced rolls topped with cheese, then broil until melted.
