  • 4 lb. sweet potatoes, peeled and chopped into medium cubes
  • 4 tbsp. melted butter
  • 2 c. packed brown sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. pure vanilla extract
  • 1/4 tsp. ground nutmeg (optional)
  • Pinch kosher salt
  • 1 1/2 c. mini vegan marshmallows
  • 1/2 c. whole pecans

Instructions

  1. Grease the slow cooker bowl with cooking spray.
  2. Place peeled and chopped sweet potatoes in the slow cooker.
  3. In a medium mixing bowl, whisk together melted butter, brown sugar, cinnamon, vanilla extract, nutmeg (if desired), and salt.
  4. Pour the mixture over the sweet potatoes and toss to coat evenly.
  5. Cover and cook on high for 4 hours, stirring every hour.
  6. After cooking, add marshmallows and pecans on top and cook for an additional 10 minutes until marshmallows melt.
