  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
  3. Add egg and vanilla extract; mix well.
  4. Gradually incorporate flour, salt, and baking powder until just combined.
  5. Scoop out cookie dough into balls and flatten them on the baking sheet. Create an indent in the center for filling.
  6. For the filling, combine butter, brown sugar, chopped pecans, heavy cream, vanilla extract, cinnamon, nutmeg, and salt in a saucepan over medium heat until bubbly.
  7. Spoon the pecan filling into each cookie indent.
  8. Bake for 8-9 minutes or until edges are golden; let cool before transferring to a wire rack.
