  • 1/2 cup softened butter
  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg
  • 2 & 1/3 cups flour
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 & 1/4 cup chopped pecans
  • 1/3 cup heavy cream
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1/4 tsp salt
  • 1 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy. Mix in the egg until combined.
  3. Gradually add flour, salt, and baking powder to the wet mixture until just combined.
  4. Scoop out cookie dough onto the prepared baking sheet and flatten each ball slightly. Create an indent in the center for the filling.
  5. For the filling, melt remaining butter with brown sugar, chopped pecans, heavy cream, vanilla extract, cinnamon, nutmeg, and salt in a saucepan over medium heat until bubbly.
  6. Spoon the filling into each cookie’s indent and bake for about 8–9 minutes or until edges are lightly golden.
