  • 1/3 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 & 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • 3/4 tsp baking powder
  • 3 oz cream cheese (softened)
  • 1/2 cup brown sugar
  • 5 oz pumpkin puree
  • 2/3 cup heavy cream (cold)
  • 1 tbsp white sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • orange gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl or stand mixer, cream together softened butter, vegetable oil, granulated sugar, and powdered sugar until light and fluffy. Add the egg and vanilla extract and mix until well combined.
  3. Gradually add flour, salt, and baking powder, mixing until just combined to form a soft dough.
  4. Using a cookie scoop, portion out nine equally sized balls onto the prepared baking sheet. Flatten each ball gently to about 1 inch thick and press down in the center to create space for filling.
  5. Bake for 8-9 minutes or until edges are lightly golden; allow cooling on the baking sheet before transferring to a wire rack.
