  • 1 lb fettuccine pasta
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon extra virgin olive oil
  • 3 tablespoons unsalted butter
  • 2 tablespoons unbleached all-purpose flour
  • 2 tablespoons white grape juice or vinegar
  • 1 cup vegetable broth
  • 1 cup skim milk
  • 1 cup parmesan cheese, freshly shredded
  • 1/2 teaspoon fresh thyme leaves, roughly minced
  • 1/2 teaspoon fresh oregano, roughly minced
  • Salt and pepper to taste

Instructions

  1. Cook fettuccine according to box instructions, saving 1/4 cup of the pasta water before draining.
  2. While fettuccine is cooking, heat olive oil in a large skillet over medium-high heat.
  3. Add mushrooms and cook for about 5 minutes until softened and they start releasing their juices.
  4. Stir in minced garlic and cook for another minute until fragrant.
  5. Pour in white grape juice or vinegar and scrape up any browned bits from the bottom of the skillet.
  6. Add remaining butter to the skillet until melted, then stir in flour and cook for 2 minutes while mixing frequently.
  7. Slowly pour vegetable broth into the skillet while stirring until smooth; gradually add milk while continuing to stir until well combined.
  8. Bring sauce to a simmer then reduce heat to medium-low and let cook for about 3-4 minutes while stirring occasionally until thickened.
  9. Reduce heat to low; stir in parmesan cheese until completely smooth, then add thyme, oregano, salt, and pepper to taste.
  10. Remove from heat; stir cooked fettuccine into the skillet coating evenly with sauce, adding reserved pasta water one tablespoon at a time until desired consistency is reached.
