  • 12 large eggs
  • 2 Tbsp Old Bay seasoning
  • ½ package shallot & chive Boursin (about 2.5 oz)
  • ¼ cup mayonnaise
  • 1½ Tbsp tomato paste
  • ½ Tbsp minced garlic
  • ½ Tbsp yellow mustard
  • 3 tsp Tabasco
  • 1 Tbsp lemon juice
  • ¼ cup pickle juice

Instructions

  1. Boil the eggs by placing them in a pot covered with cold water. Bring to a boil, then turn off the heat and let sit for 12 minutes. Rinse under cold water and peel.
  2. Slice each boiled egg in half lengthwise and scoop out the yolks into a mixing bowl.
  3. Add Old Bay seasoning, shallot & chive Boursin, mayonnaise, tomato paste, minced garlic, yellow mustard, Tabasco, lemon juice, and pickle juice to the yolks. Mix until smooth.
  4. Coat the cut side of egg whites with Old Bay seasoning.
  5. Fill the egg whites with the yolk mixture using a piping bag for neatness.
  6. Garnish with optional toppings like dill pickles or cherry tomatoes before serving.
