  • 1 1/2 cups cooked chicken (diced)
  • 1/2 cup celery (diced)
  • 1/2 cup onion (diced)
  • 4 cups chicken broth
  • 5 tablespoons butter
  • 1/4 cup + 1 tablespoon all-purpose flour
  • 2 cups milk
  • Salt and black pepper to taste

Instructions

  1. Prepare all ingredients by chopping the potatoes, celery, onion, and cooked chicken into small pieces.
  2. In a large pot or Dutch oven, melt the butter over medium heat. Add diced onions and celery; sauté for about 5 minutes until softened.
  3. Add the diced potatoes to the pot along with chicken broth. Bring to a boil, then reduce heat and simmer for about 10 minutes until the potatoes are tender.
  4. To thicken the soup, whisk together flour with a small amount of milk in a bowl until smooth. Gradually stir this mixture into the soup along with the remaining milk. Cook for an additional 5 minutes until thickened.
