  • 1 lb chicken breast (cubed)
  • 12 oz orzo pasta
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 1 zucchini (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1/3 cup balsamic glaze
  • 3 tablespoons olive oil
  • 3 cloves garlic (minced)
  • Salt to taste
  • Black pepper to taste
  • 1/2 cup feta cheese (crumbled)
  • 1/4 cup fresh basil (chopped)

Instructions

  1. In a pot of salted boiling water, add orzo and cook for 8-10 minutes. Drain and set aside.
  2. Preheat the oven to 425°F (220°C). Toss chopped bell peppers, zucchini, olive oil, salt, and pepper in a bowl. Spread on a baking sheet and roast for about 20 minutes until tender.
  3. In a skillet over medium heat, add olive oil and cubed chicken. Season with salt and pepper; cook until golden brown (5-7 minutes).
  4. Stir in minced garlic until fragrant, then pour in the balsamic glaze to coat the chicken evenly.
  5. Add cooked orzo and roasted veggies to the skillet; mix well.
  6. Remove from heat and top with crumbled feta cheese and fresh basil before enjoying warm.
