Scale
  • 2 pounds chicken wings (drumettes and flats)
  • 2 teaspoons baking powder (aluminum-free)
  • ½ stick unsalted butter
  • 2 tablespoons minced garlic
  • 2 teaspoons kosher salt
  • 1 teaspoon onion powder
  • ½ teaspoon ground black pepper
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Pat the chicken wings dry with paper towels to remove moisture.
  3. In a large bowl, combine chicken wings with baking powder, salt, onion powder, black pepper, smoked paprika, and optional red pepper flakes until evenly coated.
