  • 4 large flour tortillas
  • 8 slices provolone cheese
  • 12 ounces deli roast beef
  • 1 cup French fried onions
  • 2 tablespoons extra virgin olive oil
  • 1 can beef consommé
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons low sodium soy sauce
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Lay each tortilla flat; place two slices of provolone on one half. Add approximately three ounces of roast beef and a handful of French fried onions. Brush the edge with olive oil.
  3. Roll up tightly from the filled end and press the edge to seal. Place seam-side down on the baking sheet.
  4. Brush the tops with remaining olive oil and bake for 8–10 minutes until golden brown.
  5. Meanwhile, prepare the au jus by combining all ingredients in a saucepan and heating until simmering.
  6. Let roll ups rest for 2 minutes before slicing and serving with warm au jus.
