  • 1 teaspoon cornstarch
  • 1 teaspoon ground cinnamon

  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup (113g) unsalted butter (softened to room temperature)
  • ¾ cup (150g) firmly packed light brown sugar
  • 1 large egg (at room temperature)
  • 1 teaspoon vanilla extract
  • 2 ounces (57g) unsweetened baking chocolate (coarsely chopped)
  • ¼ cup (57g) unsalted butter
  • 1 teaspoon vanilla extract
  • ¼ cup (60mL) milk or cream
  • 2 cups (240g) powdered sugar
  • ⅙ teaspoon salt
  • ½ cup (113g) unsalted butter (softened to room temperature)
  • 3 and ½ ounces (99g) vegan marshmallows creme
  • ½ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 1 and ¾ cups (210g) powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together flour, crushed graham crackers, cornstarch, cinnamon, baking soda, baking powder, and salt.
  3. In another bowl, cream softened butter and brown sugar using an electric mixer until fluffy. Add the egg and vanilla extract; mix until fully combined.
  4. Gradually incorporate the dry ingredients into the wet mixture without overmixing.
  5. Drop rounded tablespoons of dough onto a baking sheet and bake for 10 minutes or until edges are golden brown.
  6. For frosting, melt chocolate and butter together; stir in vanilla and milk/cream before adding powdered sugar until smooth.
  7. Make vegan marshmallows buttercream by mixing softened butter with vegan marshmallow creme, vanilla extract, salt, and powdered sugar until fluffy.
  8. Allow cookies to cool completely before frosting with chocolate frosting followed by a layer of vegan marshmallows buttercream.
