  • 2 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 2 egg yolks, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup unsulphured molasses

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese with granulated sugar and vanilla extract until smooth. Scoop into small balls and freeze until firm.
  2. Create the spiced sugar coating by combining granulated sugar with ground ginger, cinnamon, allspice, nutmeg, and cloves in a bowl.
  3. Make the gingerbread cookie dough by whisking together flour and spices in one bowl while beating butter and brown sugar until fluffy in another. Mix in egg yolks, molasses, and vanilla extract; then gradually add dry ingredients to form dough.
  4. Assemble cookies by scooping dough around frozen cheesecake balls to form smooth balls.
  5. Roll each cookie ball in the spiced sugar mixture and place on a parchment-lined baking sheet.
  6. Bake at 350°F (175°C) for 11-12 minutes until soft.
