  • 2 1/2 cups gluten-free all-purpose baking flour
  • 3/4 teaspoon salt
  • 2 Tablespoons granulated sugar
  • 3/4 cup unsalted butter (cold and cubed)
  • 57 Tablespoons ice water
  • 3 cups peeled & finely diced apples
  • 1/2 cup light brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg
  • 2 Tablespoons gluten-free all-purpose flour
  • 1 large egg (beaten, for egg wash)

Instructions

  1. Prepare the crust dough by mixing gluten-free flour, salt, and sugar in a bowl. Cut in cold butter until crumbly, then gradually add ice water until dough forms. Chill for 15 minutes.
  2. For the filling, combine diced apples with brown sugar, cinnamon, nutmeg, and gluten-free flour in another bowl.
  3. Preheat oven to 350°F (175°C). Roll out the chilled dough and cut circles to fit muffin tin cups. Press into each cup and fill with apple mixture.
  4. Brush tops with beaten egg and bake for about 20 minutes or until golden.
