  • 10.5 ounces cream of chicken soup
  • 1/3 cup sour cream
  • 15 ounces canned green chili enchilada sauce
  • 12 6-inch corn tortillas
  • 4 ounces canned diced green chiles (drained if needed)
  • 2 cups shredded cheddar
  • Salt and pepper (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cream of chicken soup, sour cream, 1/3 cup of enchilada sauce, salt, and pepper.
  3. Stir in shredded chicken and diced green chiles until well combined.
  4. Pour 1/4 cup enchilada sauce into an 8-inch x 8-inch baking pan, coating the bottom evenly.
  5. Layer three tortillas over the sauce. Spread one-third of the chicken mixture on top and drizzle with another 1/3 cup enchilada sauce.
  6. Repeat layering: add three more tortillas, another third of the chicken mixture, another drizzle of enchilada sauce, and one cup of shredded cheese.
  7. Finish with three more tortillas on top and pour any leftover enchilada sauce over everything.
  8. Sprinkle remaining cheese on top and bake for about 25 to 30 minutes until bubbly and golden brown.
