  • 1 pound cremini mushrooms
  • 2 medium yellow onions
  • 1 cup chicken broth
  • 1 cup oat milk
  • Olive oil
  • Panko bread crumbs
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Boil salted water in a large pot.
  2. Cook the green beans for 4–5 minutes; drain and cool in ice water.
  3. Sauté onions in olive oil until golden brown. Toss with melted butter and panko; bake until crispy.
  4. Sauté mushrooms, garlic, thyme, salt, and pepper until softened.
  5. Make the sauce by whisking flour into melted butter, then gradually adding broth and oat milk; simmer until thickened.
