Scale
  • 4 Boneless, Skinless Chicken Breasts
  • 1 cup Ricotta Cheese
  • 1/3 cup Grated Parmesan Cheese (optional)
  • 2 cups Fresh Spinach
  • 1/4 cup Fresh Basil
  • 1/4 cup Fresh Parsley
  • 1 teaspoon Garlic Powder
  • Salt and Pepper to taste
  • 1 cup Marinara Sauce
  • 2 tablespoons Olive Oil

Instructions

  1. In a mixing bowl, combine ricotta cheese, grated Parmesan (if using), chopped spinach, basil, parsley, garlic powder, salt, and pepper.
  2. Pound each chicken breast to about 1/2 inch thick for even cooking.
  3. Place a portion of the ricotta mixture in the center of each chicken breast. Roll tightly and secure with toothpicks or kitchen twine.
  4. Heat olive oil in a skillet over medium heat. Sear the rolls seam side down for about 3–4 minutes on each side until browned.
