  • 4 bell peppers (any color)
  • 1 Tbsp olive oil
  • 4 cups fresh spinach
  • 15 oz ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • 1 handful chopped flat-leaf parsley
  • 2 large eggs
  • 1 tsp each dried rosemary, dried thyme, fennel seeds, and salt
  • ½ tsp pepper
  • ½ cup breadcrumbs
  • 1 Tbsp oil

Instructions

  1. Preheat oven to 400°F (204°C). Halve the bell peppers, remove seeds, and place cut-side up on a parchment-lined baking sheet. Brush with olive oil and bake for about 20 minutes until slightly softened.
  2. Microwave spinach until wilted. Chop finely and combine in a bowl with ricotta, mozzarella, parmesan, green onions, herbs, seasonings, and eggs.
  3. Fill each pepper with the mixture without overstuffing. Top with breadcrumbs mixed with a little oil.
  4. Return to oven and bake at 350°F (176°C) for another 30 minutes or until golden brown.
