Ingredients

Scale
  • 4 boneless, skinless chicken breasts (1 lb)
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 medium yellow onion, chopped
  • 4 tbsp unsalted butter
  • 1/3 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken breasts with salt and pepper and bake in a greased baking dish for 20-25 minutes until fully cooked.
  3. While the chicken bakes, chop the onion and carrots and mince the garlic.
  4. In a skillet over medium heat, melt butter; sauté onions until translucent (about 5 minutes), then add garlic.
  5. Sprinkle flour over the mixture; stir constantly for about 2 minutes to form a roux. Gradually whisk in chicken broth and heavy cream; simmer until thickened (about 5 minutes).
  6. Add cooked chicken, diced carrots, and frozen peas to the creamy mixture; mix well.
  7. Pour filling into a baking dish. Cover with pie crust, sealing edges securely and cutting slits for ventilation.
  8. Bake for 30-35 minutes until the crust is golden brown. Allow to cool slightly before serving.
