  • 1 lb. fresh green beans
  • 8 tablespoons salted butter
  • 1 large onion
  • 8 ounces sliced mushrooms
  • 3 cloves garlic
  • 2 1/2 cups half-and-half
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons flour or cornstarch
  • 2 cups fried onions

Instructions

  1. In a large skillet, melt 4 tablespoons of butter over medium-high heat. Sauté chopped onions until caramelized (7–8 minutes), then add mushrooms and cook for an additional 4 minutes. Stir in minced garlic for another minute and transfer to a bowl.
  2. In the same skillet, melt remaining butter on medium heat. Whisk in flour or cornstarch to form a roux for about 2 minutes, then gradually add half-and-half along with salt and pepper, cooking until thickened (4–5 minutes).
  3. Blanch green beans in boiling water for 6–7 minutes until tender-crisp; drain and optionally place in an ice bath.
  4. Mix the vegetable mixture into the cream sauce, fold in blanched green beans, and pour into a greased baking dish.
  5. Bake at 350°F for approximately 25 minutes until bubbly; top with fried onions and bake for an additional 5 minutes until golden brown.
