  • 3 cups shredded sweetened coconut
  • 15 ounces soft caramels
  • 3 tablespoons whole milk
  • 8 ounces dark chocolate

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together the unsalted butter and sugar until light and fluffy.
  3. Gradually add flour, baking powder, and salt; mix until well combined.
  4. Stir in milk and vanilla extract until dough forms.
  5. Roll small balls of dough (about 1 tablespoon each) and place them on prepared sheets, creating a hole in the center of each cookie.
  6. Bake for 12-15 minutes or until edges are lightly golden; cool completely on wire racks.
  7. In a saucepan over low heat, melt caramels with whole milk and salt, then mix in coconut until fully coated.
  8. Spoon caramel-coconut mixture onto each cooled cookie and let set while melting dark chocolate.
  9. Drizzle melted chocolate over each cookie; allow to cool completely before serving.
