  • 4 large chicken breasts (trimmed and sliced in half horizontally)
  • 1 lb green beans (fresh or frozen)
  • 2 lbs potatoes (cut into 1-inch pieces)
  • 1/3 cup honey
  • 3 tbsp yellow mustard
  • 3 tbsp stone ground or dijon mustard
  • 1½ tsp minced garlic
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 2 tbsp olive oil (divided)

Instructions

  1. Preheat your oven to 450°F. Line two sheet pans with foil and spray lightly with cooking spray.
  2. Cut potatoes into even 1-inch pieces, toss with 1 tablespoon olive oil, salt, and pepper. Spread on one sheet pan and bake for 20 minutes.
  3. If using fresh green beans, trim their stems, then toss in a bowl with remaining olive oil, salt, and pepper.
  4. Season chicken breasts with salt on both sides; set aside while mixing the sauce.
  5. In a small bowl, combine honey, yellow mustard, stone ground mustard, garlic, onion powder, paprika, parsley, thyme, and remaining olive oil.
  6. After baking potatoes for 20 minutes, add green beans beside them; place seasoned chicken on the second pan and brush with honey mustard sauce.
  7. Bake both pans for an additional 15-20 minutes until chicken reaches an internal temperature of 160°F.
