Ingredients

Scale
  • 1 cup cottage cheese (preferably whole milk)
  • 1 cup rolled oats
  • 1/2 cup applesauce or grated apple
  • 1 large egg
  • 1/2 tsp ground cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a mixing bowl, combine the cottage cheese, rolled oats, applesauce or grated apple, egg, ground cinnamon, honey or maple syrup (if using), baking powder, and a pinch of salt. Mix until smooth.
  3. Let the batter rest for 5 minutes to allow the oats to absorb moisture.
  4. Spoon the batter into the mini muffin pan, filling each cup nearly to the top.
  5. Bake for 18 to 20 minutes until lightly golden and set.
  6. Allow cooling in the pan for a few minutes before transferring to a wire rack.
