  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 4 ounces brie cheese, rind removed and cut into small pieces
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium saucepan, heat olive oil over medium heat. Add cranberries and cook until they soften. Stir in honey, orange juice, cinnamon, ginger, salt, and pepper. Cook until thickened; let cool.
  3. Cut pockets in the chicken breasts and stuff each with Brie cheese and cranberry mixture. Secure with toothpicks.
  4. Sear stuffed chicken in a cast iron skillet over medium-high heat until golden brown on each side.
  5. Top with panko mixed with melted butter and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
