  • 1 cup long grain white rice
  • 2 cups low-sodium chicken broth
  • 1 cup frozen mixed vegetables
  • 1 small onion
  • 2 cloves garlic
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • Salt
  • Black pepper

Instructions

  1. Set the Instant Pot to sauté mode. Add olive oil and sauté chopped onion and minced garlic for about 2-3 minutes until fragrant.
  2. Add chicken pieces, salt, and pepper; brown for another 2-3 minutes.
  3. Stir in rinsed rice, chicken broth, and frozen mixed vegetables. Secure the lid and set to sealing position.
  4. Cook on high pressure for 8 minutes with a natural pressure release for 5 minutes before quickly releasing any remaining pressure.
  5. Open the lid carefully and stir in heavy cream and shredded cheddar cheese until well combined.
  6. Serve hot, garnished with fresh herbs if desired.
