  • 3 pounds beef chuck roast
  • 1 tsp kosher salt
  • 1 tsp garlic powder
  • 1 cup beef broth
  • 1 packet brown gravy dry mix
  • 3 pounds Russet potatoes, peeled and cubed
  • 1 ½ tsp kosher salt
  • ¾ cup milk
  • 3 Tbsp butter
  • ½ tsp garlic powder
  • ¼ cup sour cream
  • 12 slices white bread or Texas toast

Instructions

  1. Season the chuck roast with kosher salt and garlic powder, then place it in the Instant Pot with beef broth.
  2. Lock the lid and cook on high pressure for 70 minutes. Release pressure and remove roast.
  3. Place cubed potatoes in a steamer basket above the beef (or directly in the pot). Cook on high pressure for 8 minutes.
  4. Mash cooked potatoes with milk, butter, garlic powder, and sour cream until creamy.
  5. For gravy, strain excess fat from the broth and whisk in brown gravy mix while sautéing until thickened.
  6. Slice or shred the beef and assemble your sandwich by layering it on toasted bread with gravy.
