  • 1 pound rotini pasta
  • 2 containers marinated mozzarella cheese balls
  • 56 sliced peperoncini peppers
  • 10 ounces cherry tomatoes
  • 1 cup pickled red onion
  • 10 slices deli Genoa turkey
  • 8 slices deli chicken
  • 20 slices turkey pepperoni
  • Shredded lettuce
  • 1 1/3 cups mayonnaise
  • 1/3 cup apple vinegar
  • 1 tablespoon pepperoncini pepper juice
  • Marinade oil from marinated mozzarella balls
  • 1/2 teaspoon fresh black pepper
  • 1 teaspoon salt
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, whisk together mayonnaise, apple vinegar, pepper juice, marinade oil, black pepper, salt, oregano, garlic powder, and red pepper flakes until smooth.
  2. In a large bowl, combine cooked rotini pasta with marinated mozzarella balls (sliced), sliced peperoncini peppers, halved cherry tomatoes, pickled red onion, chunks of Genoa turkey and chicken slices, and turkey pepperoni.
  3. Pour dressing over the salad mixture and gently stir until well combined.
  4. Cover and refrigerate for several hours to let flavors meld.
  5. Just before serving, fold in shredded lettuce for added crunch.
