  • 200g granulated sugar
  • 120g light or dark brown sugar
  • 1 egg, at room temperature
  • 1 egg yolk, at room temperature
  • 1 tsp vanilla extract
  • 200g all-purpose flour, sifted
  • 80g cocoa powder, sifted
  • 1 tsp kosher salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 300g Kit Kats, coarsely chopped (plus extra for topping)
  • 150g chopped chocolate (dark preferred)

Instructions

  1. Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a stand mixer, cream together unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg, egg yolk, and vanilla extract; mix until well combined.
  4. Gradually incorporate the sifted flour, cocoa powder, salt, baking soda, and baking powder until just combined.
  5. Gently fold in chopped Kit Kats and chocolate using a rubber spatula.
  6. Use a cookie scoop to portion dough onto prepared baking sheets; press additional Kit Kat pieces on top if desired.
  7. Bake for 15-16 minutes or until slightly set around the edges. Allow cooling on the baking sheet for 15-20 minutes before transferring to a wire rack.
