Ingredients

Scale
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 1 tbsp lemon juice (for glaze)
  • 1 tsp lemon zest (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, beat together softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Add eggs one at a time, mixing well after each addition. Then stir in lemon juice, lemon zest, and vanilla extract.
  4. Gently fold in flour and salt until just combined; avoid overmixing.
  5. Pour the batter into the prepared pan and smooth the top. Bake for 22–25 minutes or until a toothpick comes out clean.
  6. Allow the brownies to cool completely before preparing the glaze.
  7. Mix powdered sugar, lemon juice, and zest in a small bowl until smooth; spread over cooled brownies.
  8. Chill in the refrigerator for about 15 minutes before slicing into bars.
