  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup softened butter
  • 1 cup sugar
  • 1 large egg
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon vanilla extract
  • Optional: yellow food coloring
  • Additional sugar and powdered sugar for coating

Instructions

  1. In a large bowl, mix together flour, baking soda, and salt; set aside.
  2. In a stand mixer, cream together softened butter and sugar until fluffy. Add egg, lemon juice, lemon zest, vanilla extract, and optional food coloring; mix well.
  3. Gradually add dry ingredients to wet mixture until just combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
  4. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  5. Scoop out dough using a small cookie scoop and roll into balls. Roll each ball in regular sugar first, then coat generously in powdered sugar.
  6. Place on baking sheets about 2 inches apart and bake for 10–12 minutes until edges are set but centers remain soft.
  7. Allow cooling on the baking sheet for five minutes before transferring to a wire rack.
