  • 8 ounces pasta (any shape)
  • 1 pound chicken breasts (cut into bite-size pieces)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic (minced)
  • ½ cup sun-dried tomatoes in oil (chopped)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese (or Pecorino Romano)
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package directions. Drain, reserving ½ cup of pasta water.
  2. Season the chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat, add chicken, and cook until golden brown, about 5–7 minutes. Remove and set aside.
  3. In the same skillet, sauté minced garlic and sun-dried tomatoes for 1–2 minutes until fragrant. Add chicken broth; simmer for 2–3 minutes.
  4. Reduce heat to medium, stir in heavy cream and Parmesan cheese, cooking until the sauce thickens slightly.
  5. Return chicken to the skillet, add cooked pasta, and toss gently to coat evenly. If needed, adjust sauce consistency with reserved pasta water.
  6. Serve garnished with additional Parmesan and enjoy!
