Ingredients

Scale
  • 8 ounces pasta (any shape)
  • 1 pound chicken breasts (cut into bite-sized pieces)
  • Salt and black pepper to taste
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic (minced)
  • ½ cup sun-dried tomatoes (chopped)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions in salted boiling water. Drain and set aside, reserving ½ cup of the pasta water.
  2. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat, add chicken, and cook until golden brown (5–7 minutes). Remove from skillet.
  3. In the same skillet, sauté minced garlic and sun-dried tomatoes for 1–2 minutes until fragrant. Add chicken broth, simmer for 2–3 minutes.
  4. Lower heat; stir in heavy cream and Parmesan cheese, cooking until thickened (2–3 minutes).
  5. Return chicken to the skillet, add cooked pasta, and toss to coat. Use reserved pasta water as needed for desired consistency.
  6. Serve hot with additional Parmesan if desired.
