- 3 slices white sandwich bread
- 1/4 cup extra virgin olive oil
- 2 tbsp apple vinegar
- 1 head romaine lettuce
- 2 large tomatoes
- 1/2 green bell pepper
- 1/2 red onion
- 1 cup whole pitted kalamata olives
- Freshly grated parmesan cheese
- Preheat oven to 200°C (390°F). Cut bread into cubes, toss with olive oil and salt, then bake for about 15 minutes until golden.
- In a jar, mix olive oil, apple vinegar, parmesan, sugar, garlic powder, basil, chili flakes (optional), salt, and pepper; shake well.
- In a bowl, combine croutons with chopped lettuce, tomatoes, bell pepper, onion, and olives. Pour dressing over and toss to combine.
- Serve immediately with reserved parmesan on top.
