  • 8 oz dry pasta
  • 4 cups corn kernels
  • ⅔ cup mayonnaise
  • ⅓ cup Mexican crema
  • 2 tablespoons lime juice
  • ½ cup diced onion
  • 2 tablespoons diced jalapeño
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside in a large mixing bowl.
  2. In a cast iron skillet over medium-high heat, melt salted butter and char corn kernels for about 5-8 minutes; season with salt.
  3. In a separate bowl, whisk mayonnaise, Mexican crema, lime juice, sugar, chili powder, garlic powder, salt, and pepper.
  4. Add charred corn to the pasta along with diced onion and jalapeño. Drizzle dressing over the mixture and stir well to combine.
  5. Serve immediately or chill in the refrigerator before serving.
