  • 1/2 cup buttermilk
  • 1 cup grated apple (about 1 medium apple)
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp cinnamon
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  3. Cream together softened butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, followed by vanilla extract.
  5. Alternately mix in the dry ingredients and buttermilk, starting and ending with dry ingredients.
  6. Fold in grated apple until just combined.
  7. Divide batter among liners and bake for 18–20 minutes or until a toothpick comes out clean.
  8. Allow cooling before frosting with prepared cinnamon buttercream.
