  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 cup basmati rice, rinsed and drained
  • 2 cups chicken broth
  • 1/4 cup parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. In a mixing bowl, combine spices and toss chicken until coated.
  3. Brown the seasoned chicken in the pot and set aside.
  4. Sauté onions and garlic in the same pot until translucent.
  5. Stir in rinsed basmati rice until well-coated.
  6. Return chicken to the pot and mix thoroughly.
  7. Pour in chicken broth; bring to a boil while stirring gently.
  8. Cover and reduce heat; simmer for 15-20 minutes until rice is cooked through.
  9. Let sit covered for an additional 10 minutes before fluffing with a fork.
  10. Garnish with chopped parsley and serve warm with lemon wedges.
