  • 6 russet potatoes
  • 8 ounces cream cheese
  • 1 cup grated sharp cheddar cheese
  • 8 ounces sour cream
  • ½ cup milk
  • 3 tablespoons melted butter, divided
  • 1 teaspoon garlic salt
  • 2 teaspoons dried minced chives
  • 1 cup crushed Corn Flakes
  • ½ teaspoon paprika
  • Optional garnish: chopped fresh chives, chopped fresh parsley, or sliced green onions

Instructions

  1. Boil cubed potatoes in a large pot until tender (15-20 minutes). Drain well.
  2. In a mixing bowl, combine potatoes with cream cheese, cheddar cheese, sour cream, milk, 2 tablespoons melted butter, garlic salt, and chives. Mix until fluffy.
  3. Spread the mixture in a greased baking dish.
  4. In a small bowl, mix crushed Corn Flakes with remaining tablespoon melted butter and sprinkle over the potato mixture.
  5. Bake at 350°F for 30-35 minutes until bubbly and golden on top.
