  • 3 packets (21g) unflavored vegan gelatin
  • 1 cup (227g) cool water, divided
  • 1 1/2 cups (298g) granulated sugar
  • 1 cup (312g) light corn syrup
  • 1/8 teaspoon table salt
  • 1/2 cup (78g) peppermint crunch or hard peppermint candies
  • Confectioners' sugar for dusting

Instructions

  1. In a bowl, combine vegan gelatin with ½ cup of cool water and set aside.
  2. In a saucepan, mix sugar, corn syrup, salt, and remaining water. Heat over medium until sugar dissolves.
  3. Increase heat and cook until syrup reaches 238°F to 240°F on a candy thermometer.
  4. Slowly pour hot syrup into the softened gelatin while mixing on low speed; then whip on high until thick and fluffy.
  5. If desired, add peppermint oil for stronger flavor before mixing in peppermint crunch candies.
  6. Spread mixture into a greased 9" x 13" pan and sprinkle confectioners' sugar on top.
  7. Allow to set undisturbed for several hours or overnight before cutting into squares.
