  • 3 cups rotini pasta (cooked and drained)
  • 8 ounces sharp cheddar cheese (cubed)
  • 1 cup mini dill pickles (sliced)
  • 1/4 cup red onion (chopped)
  • 1 cup mayonnaise
  • 2/3 cup sour cream
  • 1/4 cup dill pickle juice
  • 1 tablespoon fresh dill (chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Cube the cheddar cheese and chop the mini dill pickles and red onion while the pasta cooks.
  2. Drain the pasta in a colander and rinse with cold water. In a large mixing bowl, combine cooked pasta, cubed cheese, sliced pickles, and chopped onion.
  3. In a smaller bowl, whisk together mayonnaise, sour cream, dill pickle juice, chopped dill, salt, and pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss gently until evenly coated. Cover and refrigerate for at least 2 hours before serving.
