Instructions

  1. In a stand mixer or large mixing bowl, beat softened butter until smooth.
  2. Add ½ cup powdered sugar and vanilla; mix until light and fluffy.
  3. In a separate bowl, whisk together flour and dry pistachio pudding mix.
  4. Gradually add the flour mixture to the butter mixture until a soft dough forms.
  5. Shape the dough into a ball, wrap it in wax paper, and refrigerate for 1 hour.
  6. Preheat oven to 350°F and line a baking sheet with parchment paper.
  7. Roll chilled dough into teaspoon-sized balls, place on the baking sheet, and gently press down.
  8. Bake for 6–9 minutes or until set but not browned; cool for 3–5 minutes on the sheet.
  9. Roll warm cookies in remaining powdered sugar; transfer to a wire rack to cool completely.
