  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F and line a cookie sheet with parchment paper.
  2. In a bowl, mix flour, pumpkin spice, and salt; set aside. In another bowl, cream together room temperature cream cheese and butter until smooth. Gradually add sugars and mix until creamy. Incorporate egg yolk and vanilla extract.
  3. Blend dry ingredients into the wet mixture until just combined.
  4. Scoop dough onto the prepared cookie sheet and roll each portion in coarse sugar.
  5. In a separate bowl, whisk together egg, brown sugar, salt, spice, milk, pumpkin puree, and vanilla to make the filling.
  6. Make an indentation in each dough ball and fill it with about one tablespoon of the pumpkin mixture.
  7. Bake for approximately 15 minutes until edges are golden brown; cool before transferring to a wire rack.
