  • 1 1/2 cup granulated sugar
  • 1 cup pumpkin puree
  • 1/2 cup coconut cream
  • 3 tbsp melted butter
  • 3 tsp pumpkin spice
  • 1/4 tsp cinnamon
  • Pinch of salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cup all-purpose flour
  • 1/3 cup unsalted butter (room temperature)
  • 2 8 oz pkg. cream cheese
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 2 cups powdered sugar
  • 1/2 cup red candy melts
  • 1/2 cup yellow candy melts
  • 1/2 cup orange candy melts
  • 18 small leaves – washed and dried

Instructions

  1. Preheat your oven to 350°F (175°C). Line two muffin tins with cupcake liners.
  2. In a mixing bowl, beat eggs until foamy. Add sugar and continue beating until pale and fluffy.
  3. Mix in pumpkin puree, then add coconut cream and melted butter; combine thoroughly.
  4. In another bowl, sift together pumpkin spice, cinnamon, salt, baking powder, baking soda, and flour.
  5. Gradually fold dry ingredients into the wet mixture until just combined.
  6. Fill cupcake liners about two-thirds full with batter and bake for 25 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely before frosting them with a mixture of softened cream cheese, unsalted butter, vanilla extract, cinnamon, and powdered sugar.
