  • 3/4 cup vanilla wafer crumbs (about 20 cookies)
  • 2 tablespoons melted butter
  • 8 ounces cream cheese
  • 1/4 cup sugar
  • 1 tablespoon Greek yogurt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup pumpkin puree
  • 1 teaspoon pumpkin pie spice + extra for garnish
  • 1 tablespoon flour
  • 1 egg
  • 1/2 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon instant coffee granules
  • 24 chocolate covered coffee beans

Instructions

  1. Preheat your oven to 350°F and line a mini muffin tin with cupcake liners.
  2. In a mixing bowl, combine vanilla wafer crumbs and melted butter; press into each liner.
  3. Beat cream cheese and sugar until creamy in another bowl; mix in Greek yogurt, vanilla extract, pumpkin puree, pumpkin pie spice, flour, and egg until smooth.
  4. Spoon cheesecake filling into liners and bake for 18-19 minutes. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  5. Whip heavy cream with powdered sugar and instant coffee until stiff peaks form; pipe onto cooled cheesecake bites.
  6. Garnish with additional pumpkin pie spice and chocolate-covered coffee beans.
