  • 4 boneless, skinless chicken breasts
  • Garlic salt (to taste)
  • 18 corn tortillas (6-inch), torn in half
  • 1 can (28 oz) green chile enchilada sauce
  • 1 package (16 oz) shredded Monterey Jack cheese
  • 1 container (8 oz) reduced-fat sour cream

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a medium-sized baking dish.
  2. Season the chicken breasts with garlic salt and bake in the prepared dish for about 45 minutes until fully cooked.
  3. Shred the baked chicken into bite-sized pieces.
  4. Char the tortilla halves over an open flame for enhanced flavor.
  5. Spread about half an inch of green chile enchilada sauce at the bottom of the baking dish and layer with six tortilla halves.
  6. Add half of the shredded chicken followed by one-third of the cheese, half of the sour cream, and drizzle with one-third of the enchilada sauce.
  7. Repeat layering with remaining ingredients.
  8. Cover with foil and bake for approximately 45 minutes until bubbly and heated through.
