  • 500 g frozen raspberries
  • 100 g granulated sugar
  • 1 tbsp lemon juice
  • 120 g water
  • 450 g cold mascarpone cheese
  • 120 g powdered sugar
  • 2 tbsp lemon juice
  • 1 tsp vanilla paste
  • 480 g cold heavy cream
  • 25 ladyfinger cookies
  • Fresh raspberries and lemon slices for decoration

Instructions

  1. In a saucepan, combine raspberries, granulated sugar, lemon juice, and water. Cook over medium heat until boiling, then reduce heat and simmer for 10 minutes until thickened. Cool.
  2. In a mixing bowl, beat mascarpone cheese with powdered sugar, lemon juice, and vanilla paste until smooth. In another bowl, whip heavy cream to stiff peaks and gently fold into the mascarpone mixture.
  3. Dip ladyfingers briefly in the cooled raspberry mixture and layer them in a baking dish. Spread half of the mascarpone cream over the ladyfingers. Repeat with another layer of dipped ladyfingers and top with remaining cream.
  4. Chill in the refrigerator for at least four hours or overnight before serving.
