  • 200g rotini or fusilli pasta
  • 1 cucumber (diced)
  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)
  • Cherry tomatoes (sliced in half)
  • 150g mini mozzarella balls
  • 1 black olive (sliced into rounds)
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil leaves (chopped)

Instructions

  1. Cook the pasta in boiling salted water until al dente. Drain and rinse under cold water.
  2. Create eyeballs by inserting a slice of black olive into each mini mozzarella ball.
  3. In a large bowl, combine cooled pasta with diced cucumber, bell peppers, and cherry tomatoes.
  4. Whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper for the dressing.
  5. Pour the dressing over the salad mixture and toss to coat evenly.
  6. Chill in the refrigerator for at least 30 minutes before serving.
  7. Just before serving, arrange mozzarella eyeballs on top for a spooky effect.
