  • 1/2 cup plus 1 tablespoon (110 g) light brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 ½ teaspoons red gel food coloring
  • 1 1/4 cups (160 g) all-purpose flour
  • 2 tablespoons cocoa powder, sifted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup red sanding sugar for rolling
  • 1/4 cup (50 g) granulated or coarse sugar
  • dollop of red gel food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together unsalted butter, light brown sugar, and granulated sugar until smooth.
  3. Add in the egg, vanilla extract, and red gel food coloring; mix until fully combined.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt. Gradually add to the wet ingredients until just combined.
  5. Use a cookie scoop to form dough balls and roll them in red sanding sugar before placing them on the baking sheet.
  6. Bake for about 10 minutes until edges are firm but centers remain soft. Allow cooling on a wire rack.
