  • 2 to pounds parsnips
  • 5 tablespoons butter
  • 4 cloves garlic (pressed or minced)
  • ½ tablespoon minced fresh rosemary (or other fresh herbs)
  • ½ teaspoon salt (to taste)
  • ¼ teaspoon freshly ground black pepper (to taste)
  • Chopped fresh parsley (for garnish)
  • Crushed red pepper flakes (optional for garnish)

Instructions

  1. Preheat your oven to 450°F.
  2. Wash and optionally peel the parsnips. Cut them lengthwise and slice into 3 to 4 batons, discarding tough cores.
  3. Spread the parsnips on a large baking sheet in a single layer.
  4. In a skillet over medium heat, melt the butter. Add garlic and sauté until fragrant (about 20 seconds). Remove from heat and stir in rosemary.
  5. Pour the garlic butter over the parsnips; season with salt and pepper, tossing until well-coated.
  6. Roast for 10 minutes; stir and continue roasting for another 8 to 10 minutes until tender and golden brown.
  7. Adjust seasoning if needed, then garnish with parsley and optional red pepper flakes before serving.
