  • 3 tablespoons olive oil
  • 1 tablespoon honey (regular or hot)
  • ½ teaspoon cinnamon
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon red pepper flakes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ⅓ cup crumbled feta cheese
  • Fresh chives or parsley, chopped

Instructions

  1. Preheat your oven to 425°F.
  2. Wash and dry the sweet potatoes, then slice them into uniform ⅓-inch thick rounds.
  3. On a large rimmed baking sheet, drizzle olive oil and toss the sweet potato rounds to coat them evenly.
  4. Season with cinnamon, smoked paprika, cumin, coriander, red pepper flakes, salt, and black pepper. Drizzle honey on top and toss again.
  5. Roast in the oven for 20 minutes; flip each round and continue baking for another 20–25 minutes until golden brown.
  6. Transfer to a serving platter and garnish with crumbled feta cheese and fresh herbs.
